The Origin of Sushi in Kanji Characters

Sushi is said to have originated as a preserved food (nare-zushi) made by marinating fish in fermented rice that appeared in the Nara period (710-794), and was often written as “鮓 sushi” in ancient times.

Some say that the word “sushi” was originally written as “鮓 sushi” because it was made with fish, but the character “鮨” was applied because it was made with fish and was delicious.

 Diverse Kanji Expressions of Sushi

The kanji for “寿司 sushi” is often used in Kyoto. In the past, Kyoto used to deliver sushi as an offering to the Imperial Court, and it is said that this character was used because it was considered a “mede-tai” (auspicious) food.

Sushi, which is written as “control the fortune” means something that brings good luck and is eaten on festive occasions. In addition to these three kanji, sushi is sometimes written in hiragana.
